Granola with Almonds and Goji Berries is a breakfast dish consisting of rolled oats, nuts, and dry fruits sweetened with maple syrup, brown sugar or honey. It is then baked until crispy and golden brown which is then served with yogurt, fresh fruits or on its own.

If you ask me about my breakfast preferences, I love to have a satisfying and filling meal and actually do not care about the calories. So it is always a continental kind of breakfast I enjoy the most with eggs, toast slathered with butter, or a generously stuffed aloo paratha of course smeared with ghee (clarified butter). Granola happens to be my breakfast option when I want a sober meal full of nutrition and something which keeps me full for a long time. By the way, let me tell you that granola is also my dinner when I am hungry but do not want to eat any main course kind of dishes (roti or rice).

I was never a fan of granola until I tasted a homemade version made by my niece Huda, and she is the one who gave me the recipe for the best chocolate cake. So whenever she was in town, she made sure to give me a big jar of homemade granola which she would prepare with lots of pecans and maple syrup. Inspired by her recipe I got into the habit of making my own granola and almost stopped buying from the stores. I would also like to share some of her tips in making the perfect granola at home. According to her, maple syrup and brown sugar are the best options as sweeteners as compared to honey. She doesn’t recommend walnuts but rather opts for almonds and pecans which give a better result.

I love to have Granola with Almonds and Goji Berries at any time of the day as it can be a healthy option for snacking in between meal times. So whenever we prepare granola at home, it is usually in a large quantity. This turns out much cheaper than the store-bought ones, and we can customize it according to our preference. We can also have full control over what goes into the granola mixture by controlling the sweeteners, flavor of the oil, nuts, and dry fruits.

What are the variations in making Granola with Almonds and Goji Berries?

There is a huge variety from which you can choose and prepare your own granola mix. The main part consists of rolled oats, along with nuts, dry fruits, and sweeteners of your choice.

  1. Rolled Oats
  2. Nuts and dry fruits – Almonds, Walnuts, Pecans, Sunflower seeds, Pumpkin seeds, etc
  3. Dry fruits – Dried berries, Raisins, Goji berries, Dry apricots, Chopped dates, Dry figs, etc
  4. Extras – Desiccated coconut, sesame seeds, flax seeds, chocolate chips, coconut flakes, etc
  5. Spices – Cinnamon powder, vanilla essence, any other essence of your choice
  6. Sweeteners – Maple syrup, Honey, melted brown sugar
  7.  Oil – Sunflower oil, Coconut oil, melted butter
  8. Pinch of salt

 

 

How to serve Granola with Almonds and Goji Berries?

Granola can be made into bars by adding more wet ingredients. It can be served with yogurt, honey, and fresh fruits in the form of a parfait. You can also serve granola with plain milk.

GRANOLA WITH ALMONDS AND GOJI BERRIES

Ingredients
  

  • 3 cups rolled oats
  • 2 cups roughly chopped almonds
  • ¾ cup desiccated coconut
  • ½ cup goji berries
  • ½ cup pumpkin seeds
  • ¾ cup maple syrup 185ml
  • ¼ cup of coconut oil 60ml
  • 1 teaspoon vanilla essence
  • 1 teaspoon cinnamon powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat oven to 180 degrees C (350 F). Line a large baking tray with butter paper.
  • In a large bowl, mix together rolled oats, chopped almonds, desiccated coconut, and pumpkin seeds.
  • In another bowl, mix all the wet ingredients like maple syrup, coconut oil, vanilla essence along with cinnamon powder and salt. Stir well and add this mixture to the oats and nuts. Combine everything well and spread the mixture on the baking tray evenly.
  • Bake for 10 minutes and halfway through, stir the granola mixture in the baking tray so that it gets baked evenly. Return the baking tray to the oven and bake for another 10 to 15 minutes, or until it gets a light golden color.
  • Remove the tray from the oven and cool it completely until it comes to room temperature.
  • Finally, add the goji berries, or if you wish you can also add black raisins, chopped dry dates, or even chocolate chip at this stage. Mix well and store in an airtight container (Do not store hot or warm granola in the container, wait until it has completely cooled down).
  • Serve as breakfast with yogurt, honey, and fruits in a bowl or simply serve this granola mixed with milk.
