Heat oil in wok or kadhai and add grated ginger and grated garlic. After few seconds add chopped onion, curry leaves, and green chili.
Fry till onion is light brown and soft and then add tomato.
After few seconds add chicken pieces and fry on high heat till juices are sealed. Now lower the heat and add rest of the ingredients like 1/4 tsp turmeric powder, 1 tsp cumin powder, 1 tbsp red chili paste, 1 tsp crushed kasoori methi, 1 tsp tomato puree, chopped mint leaves and fresh coriander leaves.
Place the lid and add little water if needed and cook on low flame till done.
Adjust the seasoning and add more chopped fresh coriander leaves as garnish.
