Baked Cheesy Bites
Whenever I have any leftover pizza dough, I try to see for any other ingredient in my refrigerator, that can go as a filling with the dough. You can substitute the stuffing which I have mentioned with something like leftover chicken tikka pieces, or any dry vegetable preparation. Or simply just stuff it with lots of cheese and jalapenos as a lunch box option.

Make these Baked Cheesy Bites with the left-over pizza dough topped with the ingredients available at hand. Perfect for evening snack or brunch.

Ingredients
  

For the dough

  • 4 cups flour
  • 2 tbsp powdered milk
  • 1 tbsp dry yeast
  • 4 tbsp oil
  • 1 egg
  • 1 tsp salt
  • 1 tsp castor sugar

For the topping:

  • 1 cup grated cheddar cheese
  • 200 grams chicken mortadella finely chopped or chicken sausage
  • 100 grams chopped pickled jalapenos or green chili chopped

Other ingredients:

  • 4 tbsp white sesame seeds
  • 1 whole beaten egg for glazing

Instructions
 

To make the dough

  • Beat egg and oil and set aside.
  • Dissolve dry yeast into 3 tbsp of warm water along with sugar and leave it for 10 minutes. You will see froth forming on the surface after 10 minutes.
  • Take a large mixing bowl, and add flour. Make a small dent in the center of the flour and pour beaten egg, oil, and frothy yeast and sugar mixture and also the milk powder.
  • With a fork or hand, start mixing gently until everything is combined with flour.
  • By adding enough of water, little at a time, form into a smooth soft dough. (the more you knead the dough-the softer your bread will be)
  • Grease your bowl with oil and keep the dough in it covered till it rises to its double the size. (This takes about 1 hour)

To make cheesy bites

  • Pre-heat oven to 250 deg C.
  • Take the risen dough and knead it a little bit to remove the excess air.
  • Divide the dough into small lemon size balls and flatten each ball into 3 inches of diameter disc (roughly).
  • Place the grated cheese, chicken and jalapenos on half of the disc and fold over the other half to form a semi-circle.
  • With help of a fork, neatly press the ends so that they do not open while baking.
  • With help of a cooking brush, apply beaten egg as a glaze over the prepared dough and sprinkle a tsp of sesame seeds.
  • Place all the cheese bites into a greased baking tray and bake for 10 to 12 minutes.
  • Remove from oven when it gets a golden color, cool it slightly and then serve as evening snack or as breakfast.
