Shahi Tukda is a Mughlai style festive dessert. Super easy and a crowd pleasing dessert by frying bread slice rolls in ghee and soaking in rich milk called Rabri. Garnish with loads of nuts and saffron and make your festivals special.

 

I wanted to give a slight twist to a traditional Shahi Tukda to make it look different. The only thing that came to my mind was to stuff the bread slices and roll them. Just rolling a bread slice also doesn’t make sense unless it is stuffed. At the same time, I had many ideas that could be used as a stuffing. Here is a list of options that you can use as stuffing.

Stuffing for Shahi Tukda Rolls

  • Ground mixed nuts and fruits
  • Mozzarella cheese
  • Cream (sweet or plain)
  • Nutella
  • Leftover carrot halwa

Ingredients of Shahi Tukda

Bread slices – You can either use white bread slices or brown slices. By cutting the edges of the bread slices it becomes easier to flatten and roll. The rolled bread slices can be shallow fried or deep-fried in ghee or butter.

Sugar syrup – I prefer a syrup of thin consistency which balances the overall sweetness of the dessert.

Saffron Milk – The recipe for the milk is the same one that I used for Saffron Milk Cake.

Stuffing – Any kind of leftover halwa like beetroot halwa, or carrot halwa goes well with Shahi Tukda Rolls. Apart from that, crushed dry fruits and nuts, cream, and Nutella are some of the options to be used as stuffing.

 

How to serve Shahi Tukda?

Serve Shahi Tukda Rolls hot if the stuffing is mozzarella cheese. This will give the dessert a Kunafa effect. Another way of serving is to refrigerate the dessert for a couple of hours and serve it chilled.

Ingredients
  

  • 6 bread slices
  • 1 cup grated mozzarella cheese
  • Ghee for frying
  • Chopped nuts for garnish

For Sugar Syrup

  • 1 cup of water
  • ½ cup of sugar
  • 3 pieces cardamom
  • Soaking Milk Ingredients:
  • 1 ½ cups milk
  • ½ cup condensed milk
  • ¼ cup cream

For nuts Filling: (grind together)

  • 2 Dates
  • 10 cashew nuts
  • 5 walnuts
  • 10 almonds
  • 10 pistachios

Instructions
 

  • For Sugar syrup: Heat a saucepan and add sugar, water, and cardamom. Bring to a boil and cook the syrup for 5 minutes on medium heat.
  • For soaking milk: Mix together milk, condensed milk, and cream in a saucepan. Bring to a gentle boil and simmer for 5 minutes. Turn off the heat and set aside till the soaking milk comes to room temperature.
  • Cut the sides of bread slices and roll out into thin sheets. Stuff the slices with your choice of stuffing like mixed nuts or mozzarella cheese.
  • Heat ghee in a wide pan and fry the bread rolls until golden. Remove from pan and soak in sugar syrup for a few seconds. Place the sugar syrup soaked bread rolls in a serving plate and serve with soaking saffron milk.
  • You may also place the rolls on a large serving dish, pour the saffron milk and serve chilled.
