Pineapple Cream
Pineapple Cream is a a no-bake dessert with pineapple and jelly combined with a sweet cream and a biscuit topping.
Pineapple Cream is a very easy dessert, as the ingredients can always be kept handy in the kitchen pantry. You can substitute pineapple with other fruits as well, but I would like to caution you when it comes to citrus fruits.
There are chances of cream getting sour if fresh citrus fruits are added, and that is the reason why I have used tinned pineapples. You can use fresh fruits like apples, bananas, mangoes, peaches, etc.
Pineapple Cream
Pineapple Cream has always been my quick fix dessert which does not need any time-consuming preparation or any complicated ingredients. This dessert can be served by layering the biscuit mixture, cream mixture, pineapple jelly, and pineapple pieces as shown in Strawberry Cream.

Pineapple Cream is a no-bake dessert with pineapple and jelly combined with sweetened cream and a biscuit topping.

Ingredients
  

  • 10 digestive biscuits
  • ¼ cup melted butter
  • 1 big tin pineapple 10 - 12 slices
  • 1 packet pineapple jelly
  • 3 cups chilled cream
  • ¾ cup icing sugar

Instructions
 

  • In a bowl, crush the biscuits into crumbs and add melted butter. Mix well and set aside.
  • Prepare the pineapple jelly according to the instructions on the box. Chill till it is fully set. Cut the jelly into small cubes and set it aside. 3. In another large bowl, whisk the chilled cream till it thickens. You can either mix with your hand for 5 minutes or use a cake mixer. Once it thickens slightly, slowly add the icing sugar and again mix until well dissolved. Keep the cream in the refrigerator for 30 to 40 minutes.
  • Now add chopped tinned pineapple and jelly cubes to the sweet cream. Mix gently and pour the fruit cream into a large serving dish or in individual shot glasses.
  • Sprinkle crushed biscuit mixture over the cream and set in the refrigerator for 4 to 5 hours.
  • Serve chilled.

Notes

It is always better to use tinned fruits in a cream mixture if the fruits are citrus in nature.
