Homemade Spice Mix ~ Homemade Masala Powders

I have compiled recipes of homemade masala powders or spice mix which you can make and store in air-tight containers. This is very beneficial especially during the month of Ramadan when you do not want to spend a lot of time in the kitchen.

Homemade Shami Kabab Masala Powder

 

Shami Kabab Masala Powder

 

Homemade Shami Kabab Masala is a spice mix made with a special blend of spices and aromatics to give an authentic flavor for all kinds of kababs.

Ingredients

  • 20 dry red chilies
  • 3 tablespoon coriander seeds
  • 2 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 2 teaspoon shahi jeera(caraway seeds)
  • 1 teaspoon methi seeds
  • Whole spices – 10 green cardamoms, 2 brown cardamoms, 3-inch piece of cinnamon,10 cloves, 2 pieces of mace,3 bay leaves,1/2 teaspoon grated nutmeg

Dry roast the ingredients for Shami Kabab Spice mix in a hot pan for 2 minutes on medium heat. Remove from heat, cool and grind to a fine powder. Store in an airtight container.

3 tablespoon Shami Kabab spice mix for 1-kilo meat/chicken.

 

 

All-Purpose Spice Mix For Mutton/Chicken/Egg/Vegetable Curry

All Purpose Spice Mix For Curry~ Curry powder

The all-purpose spice mix is a homemade masala powder which can be used for any kinds of curries, be it chicken, mutton, vegetable or egg.

Ingredients

  • 20 dry red chilies
  • 3 tablespoon whole coriander
  • 2 tablespoon whole cumin
  • 2 tablespoon fennel seeds (badi saunf)
  • 2 teaspoon whole peppercorns
  • 10 cardamom
  • 10 cloves
  • 4-inch stick of cinnamon

Method

Dry roast all the above ingredients on a pan and grind to a smooth powder. Cool and store in an air-tight container.

Add 3 tablespoon of spice mix for 1-kilo meat. A little more if you want the curry to be spicy.

 

Homemade Tandoori Masala Powder

 

Tandoori Masala Powder Recipe

 

Homemade Tandoori Masala Powder is the best spice mix you can make and store. By doing this, any kind of grill or barbeque cooking becomes easy and time-saving.

Ingredients

  • 20 dry red chilies (long)
  • 3 tablespoon coriander seeds
  • 2 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon fenugreek seeds (methi seeds)
  • 3-inch piece cinnamon
  • 7 green cardamom
  • 7 cloves
  • 2 black cardamom
  • 1 tablespoon kasoori methi (dry fenugreek leaves)
  • 1 teaspoon black salt

 

Method

  1. Heat a pan and dry roast first nine ingredients from the above list.
  2. Transfer the roasted spices to a grinding jar. Add kasoori methi and black salt and grind to a smooth fine powder.
  3. Pass the powder through a sieving mesh to make the powder finer.
  4. Store the powder in an air-tight container.
  5. Use 3 tablespoons of tandoori masala powder for 1-kilogram chicken.

 

Homemade Achari Spice Mix

Homemade Achari Masala Powder is a versatile spice mix that can be used for veg and non-veg curries as well as any kind of achari flavored kababs.

Ingredients

  • 10 dry Kashmiri red chilies (I used byadgi)
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon fennel seeds ( Badi Saunf)
  • 2 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon methi seeds (fenugreek seeds)
  • 1/2 teaspoon nigella seeds (kalonji)
  • 1 teaspoon black salt (Kala namak)
  • 1 teaspoon turmeric powder
  • 2 teaspoon amchoor powder
  • 1 teaspoon hing (asafoetida)

 

Method

Dry roast on low flame, dry red chilies, coriander seeds, cumin seeds, fennel seeds (badi saunf), black peppercorns, mustard seeds, nigella seeds, and methi seeds for almost 2 to 3 minutes. Cool and grind to a smooth and fine powder. In a large bowl, mix together, powder from the grinder, black salt, turmeric powder, amchoor powder, hing and mix well. Store in a dry airtight glass container.

 

Homemade Haleem Masala Powder

 

 

Ingredients

  • 1 teaspoon shahi jeera (caraway seeds)
  • 3 bay leaves
  • 4 cloves
  • 5 green cardamom
  • 2-inch stick of cinnamon
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon kalonji (nigella seeds)
  • 1 tablespoon coriander seeds
  • 1 teaspoon black pepper
  • 8 dry red chilies
  • 6 -7 curry leaves

Dry roast all the ingredients and grind to a smooth fine powder. The whole recipe is enough for the haleem of 1-kilo meat.

Pepper Masala Powder For Pepper Chicken/Pepper Mutton/Pepper Egg Roast

Pepper Masala powder

Ingredients

  • 2 green cardamom
  • 4 cloves
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 3 tablespoon whole black peppercorns
  • 2 teaspoon fennel seeds (badi saunf)

Dry roast and grind to a smooth powder.
