Dahi Vada ~ Dahi Bhalla Chat

Dahi Vada is a very popular and refreshing chat. Make this deep-fried lentil patties and serve it with chilled sweet and spicy yogurt. And there is more to it, with a topping of tamarind sweet chutney and spicy green chutney.

Dahi Bhalla Chat or Dahi Vada is a complete meal on its own and the best chat to be enjoyed during the summer season.

Tips to make extra soft and pillowy texture Dahi vadas

This chat is very easy to make and by following certain tips, you can have these soft, juicy, and melt-in-the-mouth Dahi vadas.

  • It is essential to soak the lentils overnight or a minimum of 5 to 6 hours.
  • While grinding the soaked lentils do not grind all at once. Grind it in 2 or 3 batches so that the lentils grind well to a smooth and fluffy texture.
  • Deep fry the batter in small sizes for even cooking. The temperature of the oil should be at medium and not very hot.
  • Soak the fried vadas until they get double in size.
  • The texture of the yogurt should neither be too flowy nor too thick.

Dahi Vada is a popular chat made with deep-fried lentil dumplings served with chilled sweet yogurt and topped with sweet and spicy chutneys.

Ingredients
  

For Vada:

  • 1 cup urad dal black gram
  • 1 teaspoon chopped ginger
  • 1 teaspoon cumin
  • 1 or 2 green chilies chopped as per taste
  • ¾ teaspoon salt

For sweet & spicy yogurt:

  • 2 cups yogurt whisked
  • 1 teaspoon sugar or little more
  • ¼ teaspoon cumin powder
  • ¼ teaspoon red chili powder
  • ¼ teaspoon chat masala powder
  • ¼ teaspoon salt or as per taste

Instructions
 

  • Take 1 cup of urad dal and wash it thoroughly until the water is clear. Soak the lentils overnight or for a minimum of 6 hours.
  • Dry grind the soaked urad dal with few tablespoons of water as needed.
  • Grind to a smooth paste and make sure to grind in 2 or 3 batches and not all at once.
  • Remove in a large mixing bowl and add ¾ teaspoon salt or as per taste. Whisk the vada batter for 5 to 7 minutes in the same direction. This step is done to make the batter airy and light.
  • Then add 1 teaspoon whole cumin, 1 teaspoon chopped ginger, chopped green chilies as per taste, and mix well. Set aside for 30 minutes.
  • Heat enough cooking oil for deep-frying vadas in a wok. Take a tablespoon of batter with a hand or spoon and drop it into the medium hot oil. Fry all the vadas in batches and remove them on a kitchen tissue.
  • Take a bowl of clean warm water and soak all the fried vadas for 15 minutes or until they are double in size. After soaking, squeeze out all the water and place the vadas on a serving dish or tray.
  • Pour a generous amount of sweet & spicy yogurt over each vada. Sprinkle some chili powder, cumin powder, and chat masala powder. Top it with Mint chutney and spicy green chutney.
  • Serve chilled as a snack.
