What is the difference between curry powder and garam masala powder?

A curry powder is a spice mix that includes almost all the spices required to make a curry. Whereas, a garam masala powder has a few selected whole spices that can be a part of curry powder.

Ingredients like coriander and red chili powder are generally not included in a Garam Masala Spice Mix.

A typical all-purpose curry powder looks like this

Easy way to grind whole garam masala spices

It is not a mandatory step to dry roast the whole spices. By doing this step, it becomes easier to grind it into a fine powder. Furthermore, dry roasting helps in keeping the spice powder fresh for a longer period of time.

Firstly, heat a thick bottom flat pan on medium heat. Add all the whole spices in small batches and dry roast for not more than a minute. Before grinding, you must bring it to room temperature. Avoid grinding when the spices are hot.

Next, add the spices to a dry grinding jar and grind to a smooth powder. After grinding, you can pass the powder through a mesh or a sieve. Straining the powder is optional.

Finally, cool the ground spice mix for a few minutes and store it in an air-tight container.
