Here I am, on a rainy Wednesday evening, writing down this guest post for Shanaz. I am super excited to send this recipe in. Talented and warm-hearted food bloggers add such charm to the whole experience of guest blogging. It just shows that love for food can unite us all!

 

A little bit about myself: I am a 24-year-old lawyer and writer from India. I am a lawyer by qualification and a writer by profession. Kitchen Islande emerged because of a single thought: we were all graduating and I wanted to create something that would help the readers make simple yet delicious food.
Cookies are the ultimate comfort food for me. My first ‘cookie memory’ was when I was 4-5 years old. I remember my mother making butter cookies using a cookie cutter. It used to feel like she was creating magic. My brothers and I would fight tooth and nail for the last one! Cookies remind me of home, childhood, and simpler times.
Talking about the recipe, these Snickers cookies can be stored for up to 2 weeks in an airtight container. Yes, this is tried and tested. Anything with chocolate is good, and a combination of chocolate with the caramel and peanut butter of the Snickers chocolate just gives this cookie a totally different spin! Honestly, I wasn’t really a peanut butter fan before but this recipe might just be able to change my mind. Since I was apprehensive about the amount of peanut I wanted to taste in the cookies, I added a little less of the snickers. Please feel free to double this amount if you’re a peanut lover.

These snicker flavored cookies are loaded with chocolate chips making them the chewiest and scrumptious cookies ever.

Cook Time 12 minutes

Ingredients
  

  • 1 cup salted butter cut into cubes
  • 1 cup icing sugar
  • 1 cup demerara sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla essence
  • 2 ¾ cup all purpose flour Maida
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda soda bicarbonate
  • 1 cup dark chocolate chips I used Morde
  • 100 grams of snickers chopped

Instructions
 

  • Preheat oven to 180C.
  • Take a bowl and whip together butter and both the sugars until well blended and fluffy. One by one, add the eggs and whisk again.
  • Pour in the vanilla essence and mix well.
  • Take a separate bowl and sift together all the dry ingredients.
  • Add all the dry ingredients to the bowl with the wet ingredients.
  • Throw in the chocolate chips and chopped Snickers.
  • Use a medium cookie scoop to scoop two mounds of dough per cookie (3 tablespoons total) and roll dough into balls.
  • Grease the baking tray with coconut oil or line it with a buttered sheet.
  • Put the mixture in the fridge for 15-20 minutes so that it solidifies a little.
  • Make balls out of the dough (Each ball is made from 2 tsp of the dough) and bake in the preheated oven till they turn light brown. I baked mine for 12 minutes.
  • The cookies will be soft when done. Let them cool on the baking tray for 2 minutes and then place them on the wire rack.
