Ingredients

  • 8 bread slices
  • 8 tablespoon cooking oil or more

For Spicy Vegetable Batter

  • 1 cup chickpea flour
  • 1 cup water
  • 1 teaspoon chat masala powder
  • ½ teaspoon whole ajwain
  • ¼ teaspoon turmeric powder
  • ½ teaspoon sugar optional
  • 1 teaspoon red chili powder
  • ¾ teaspoon salt
  • 1 medium onion finely chopped
  • ½ cup finely chopped tomato
  • ½ cup finely chopped capsicum
  • 1 cup grated carrot
  • 1 green chili finely chopped (or more)
  • 1 tablespoon finely chopped garlic
  • ½ cup chopped coriander leaves

Instructions

  • In a bowl, add chickpea flour, chat masala powder, ajwain, red chili powder, turmeric powder, sugar, and salt. Mix all the dry ingredients well.
  • Now add water a little at a time. Keep stirring as you add the water, to avoid any lumps.
  • Once the batter is smooth, add onion, tomato, capsicum, carrot, green chilies, garlic, and chopped coriander leaves. Mix well to make a nice spicy batter for coating.
  • Heat a non-stick pan with 1 or 2 tablespoons of cooking oil.
  • Take each slice of bread and spread 2 to 3 tablespoons of this spicy vegetable mixture. Place the batter side of the toast down.
  • Shallow fry the toast on low flame for 5 minutes.
  • Right before flipping the toast, spread the same amount of batter on the top of the bread slice. Now gently flip the toast and fry for 5 to 7 minutes.
  • Repeat the above step with all the slices.
  • Serve hot with tomato sauce or spicy mint chutney.
